Tuesday 8 February is pancake day. Apart from cleansing their souls on this day, Christians in many parts of the world cleanse their larder before Lent by making yummy pancakes, accompanied by tossing competitions and races. Brits will find the pancakes served up in most Croatian restaurants are similar to back home; Americans may be surprised to find that here, the pancake is a larger and more fragile affair.
