Burek
The ubiquitous flaky pastry savoury treat known as burek literally greases the wheels of the nation. Originating from Turkey from whence it gets its name, burek (literally, ‘to twist’) comes in all manner of shapes and sizes but are essentially filo pastry snacks baked in a puddle of oil and filled with fillings, usually flavoured minced beef, goats' cheese and/or spinach. Found in bakeries all over Skopje and Macedonia, the best way to try burek is covered in lashings of natural plain yoghurt.
