Interview with Dmitry Eremeev, chef at the famous Turandot restaurant

Dmitry Eremeev is a chef with 20 years of experience, 10 of which he gained at the famous Turandot restaurant. Dmitry was there from the very beginning. It is him whom we can credit for the refined dishes that make every celebration at Turandot unforgettable. Dmitry keeps the quality top notch, making Turandot a favorite amongst the country’s political elite, cultural figures and foreign guests visiting Moscow from all corners of the planet.

- Did you always dream of becoming a chef? 
- I wanted to become a chef since I was a young boy. I always loved cooking. Like most kids, I really liked sweets and that’s why I started off making desserts.

- In your opinion, what differences exist between the tastes of Russians and, for example, Europeans?
- Russians prefer quite heavy food (meat, potatoes). It is due to the climatic conditions in which we live. Europeans, on the other hand, prefer lighter dishes. Having said that, more and more Russians are opting for lighter food. That’s why Japanese food is so popular here.

- Which dishes that you’ve tried abroad, in your opinion, probably wouldn’t be too popular here in Russia? 
- In Moscow everything that I’ve tried would probably become popular. Moscow is a huge cosmopolitan city with a very large population. Everybody’s got different tastes and our guests are becoming more and more curious when it comes to gastronomy. I can’t think of a single dish, that would not be interesting for people in Moscow.

- Soon autumn will come and it’ll start getting colder. What’s your favorite autumn dish and why?
- During the colder months, the marbled beef soup here in Turandot is extremely popular. It’s hearty, spicy and helps you warm up. For the summer months we removed it from the menu but we’ll bring it back in the winter.

- What advice would you give to someone who wants to become a chef? 
- Be hardworking. That’s the most important thing. Always keep trying and work hard. If you have the opportunity to do so, you must travel because that broadens the mind and gives people inspiration.
