November 11th is not just Polish Independence Day but also the feast day of St Martin. While this feast day is celebrated particularly in Poznan and Wielkopolska the traditional goose dishes are also part of the local Kashubian tradition. With the nights drawing in and the temperatures starting to plummet, the thought of a plump goose is no doubt a good reason to have a celebration.
