Pavaj is busy nonstop from opening to closing, so booking is highly recommended. The relatively short menu is so refreshing, offering tasty seasonal dishes sourced locally. During the summer months we should emphasise that 80% of their vegetables come from their own garden about 20km outside of Plovdiv with their tomatoes taking pride of place. Once tasted, never forgotten! For meat lovers the offer includes horse bon fillet, pork ribs, beef cheeks and their famous meatballs. Good selection of Bulgarian wine from regional wineries, also check out their offer of rakia which comes from some of the best distilleries in the Balkans and is an integral start to every Bulgarian meal along with the salad.
