Fernando Canales, a local chef with a great background in the Bilbao culinary scene, has recently moved from its previous location into this new space (a 19th century stained glass factory) keeping his Michelin star. It is a gastronomic proposal that represents author kitchen with Basque roots, where product, technology (three-dimensional glasses, 3D printed plates, menus projected on the tablecloth) and innovation are the main pillars of the proposal.
