The young chef Deivydas Praspaliauskas’ kitchen is a laboratory. Lingonberries are buried under ibérico cheek, duck breast comes with a pear and pepper sauce, parsnips with beetroot and goat cheese, fried pumpkin with apples and courgette with salty Pecorino cheese. Fabulous desserts too.
