Bulgarian cuisine is tasty and surprisingly healthy. A meal will usually start with a salad, the most traditional one being the 'Shopska', a mix of chopped tomato, cucumber, pepper and onion topped with white sheep's cheese. The main course will usually be some kind of grilled meat, though many of the restaurants also offer casserole-type dishes. Make sure to ask whether your main course comes with a side serving of vegetables and potatoes, known as 'garnitura', otherwise you may end up without. Desserts are less plentiful and are usually restricted to sweet pancakes or yogurt with jam.
