Yardbird majors in chicken – deep fried chicken like you'd find in the American South, that is. In fact, we were informed by the staff that the chicken gets its remarkable sweet and salty mix of flavours from being brined in a mix of buttermilk, flour and honey. The chef then makes some daring culinary combinations with those pieces of chicken including serving them on waffles or topped with melted mozzarella and Parmesan. We chose the buffalo-style burger, which means that the fried chicken was covered in hot sauce and blue cheese. Although certainly a delightful creation, the chicken is the true star here, so you might just want to try the classic version. After all, homemade hot sauce and Thousand Island dressing complement every meal anyway.
