DIY dining: What is hot pot?
A heated pot sits at the centre of each table, where you can choose from a variety of rich soup bases and cook your own meats, seafood, handmade noodles and fresh vegetables. It might feel unfamiliar if you're new to hot pot, but it's easy once you get the hang of it. Start by selecting your broths, then decide between a set menu or a build-your-own spread. Some diners throw everything in at once, others cook as they go. Drinks are self-service from a fridge full of Chinese drinks, fruity cocktails and Tsingtao beers.
Tip: For hot pot beginners, individual lunch specials come with a curated selection of beef, six side dishes and a choice of rice or noodles.
What we ate
We opted for a set menu for two, and the portion was generous. Our table quickly filled with wagyu beef slices, marinated beef fillet, crab roe buns, cuttlefish balls, shrimp paste, mixed mushrooms, dried tofu and handmade noodles. Next time, we'd throw in some greens on the side: Chinese cabbage or bok choi. A highlight was the DIY sauce bar. Follow the house suggestions (peanut butter or satay sauce), ask your waiter for a recommended mix, or experiment with your own flavour combos.
Ambience and VIP rooms
