An ode to Durban Indian cuisine
Ivana Pillay, the mastermind behind the concept, is out to show that Durban Indian cuisine isn’t just about what’s on your plate – it’s something to be tasted, explored, and reimagined. "I wanted to celebrate my culture through fine dining," says Pillay. Many of the ingredients used are sourced directly from Durban, are unique to the region, or form an integral part of Durban Indian cooking – such as tulsi leaves (holy basil) and betel leaf. In three words? "Naan Sense is nostalgic, immersive, and rebellious," says Pillay.Naan Sense debuts at Shepstone Gardens
If you thought spicy and surreal didn't belong on the same menu, think again. Your Naan Sense journey begins with Silk Hour: an optional, two-hour prelude designed to set the mood. Then comes The Table: a three-hour, immersive fine dining spectacle – with a surprise, seven-course menu. Each "act" is a unique food course paired with artisanal drinks (alcoholic or non-alcoholic) and a synchronised live orchestra. Pillay describes it, saying, "This dining experience is a collector's piece. The menu will never be repeated."For a few clues of what to expect, know that one course will feature a spiced candy floss, one course is a dare called "Chilli Bite", and one course has an element to crush with your hands. To up the ante? One course is served blindfolded and in complete silence. Guests can choose from one of two options: The Jungle Garden, a curated vegetarian adventure, or The Beach Front, serving up seafood reminiscent of the coastal lines that surround KwaZulu-Natal.
