Roughly translating as broth or sauce, čorba is a delicious sour soup found throughout the Balkans and beyond that needs to be tasted at least once as part of any serious trip to North Macedonia. Probably arriving with the Ottomans several centuries ago, like most other nations, the Macedonians have adapted the recipe to suit their own taste, and have done a remarkably good job. More often than featuring lots of white beans and some kind of meat that could be anything from smoked sausages to lamb, find it served in many restaurants throughout the city and be sure to order plenty of fresh white bread and soured cream to help it go down.
