The traditional Züri Tirggel honey biscuit certainly makes for a good present. The Tirggel was mentioned for the first time in the 15th century and consists of up to 30% honey. Today only a few bakeries still make this artisanal treat. The bakers create traditional Zurich motifs like the Grossmünster on the biscuits by pressing moulds onto very thin dough. The biscuits are then baked at high temperatures using only top heat. That gives them their characteristically brown top, while the bottom stays pale. The result is a hard, but sweet biscuit. It’s best to keep each bite in your mouth for a while, so you can experience the full honey flavour. Get them at St. Jakobs Bäckerei at Stauffacher or any other of their branches.
