We like to think of Hotaru as a sushi 'think tank'. Sushi master Hubert Sobczyński (aka 'Killer Prawn') has over 18 years of experience and is a man truly worthy of the title 'Master.' Add the fusion cuisine background of Bartłomiej Mynarski (aka 'Panda') to the mix and we are into a whole different kettle of raw fish! The classics are all there, but these guys have no fear of experimentation or thinking outside of the box. The colour coded 'plates' allow the customer to select ingredients and flavours - a great way of avoiding something you don't want. Recommended signature dishes include ginger prawns and the vegetarian agedashi tofu. The constant sushi musings between the amiable masters and customers add to the passionate atmosphere of this stylish and welcoming restaurant.
